Bacon wrapped chicken deliciousness

Is there anything more heavenly than bacon??  I made my Valentine bacon wrapped chicken over spaghetti Alfredo for dinner.  Super easy and double super delicious.

Roasted parmesan brussel sprouts recipe!!

Have you ever seen anything more beautiful? Roasted parmesan brussel sprouts, sauteed mushroom slathered steak and tasty Abita Purple Haze wheat beer?  I mean, really.  Growing up we didn't really have brussel sprouts for dinner, last year at my husbands company Christmas party we had brussel sprouts and they were DELICIOUS!  Cooked in butter, but they were made to perfection and that started me on the road to brussel sprouts.  A friend shared her recipe with me and now I am not going to keep this secret any longer!!

Pot Pie ~ Pennsylvania Dutch Style

 

I have fond memories of watching my Nan making chicken stock with a whole chicken or sometimes the leftovers, making the noodles and cutting up vegetables for pot pie.  Unfortunately, she has since passed and this recipe was one she knew by heart, so it was not written down.  This recipe tastes just like I remember it.  Feels like home.  And don't forget to enjoy it with your favorite tasty beverage.  Mine is Jack and Coke.

I received some chicken thighs with the skin on and bone-in, truthfully, I had no idea what to do with them.  I feel so stupid, all those years cooking bone-less skin-less chicken for $3.99 lb or more (unless on sale, then I am grabbing them up like chocolate on sale, which never is by the way) and not realizing there is a cheaper, juicy and delicious cut of chicken out there....(shakes my head)  Really though, its not MY fault!  I had no one to teach me to cook, I learned some things in Home Economics class, from friends and even my husband taught me a lot of stuff.  So here we are, I think I found the mother of all recipes for skin-on, bone-in chicken - breasts, thighs, whatever - been using this recipe faithfully.  In fact, as I write this, I have this recipe baking away in my oven.....YUM.  (oh and I am a skin eater, in which case this recipe is PERFECT for skin eaters)
